It is cloudy today in Seattle, but for the past few days the sun had been harsh and blistering. I never thought it can get consistently warm – and I mean at least 80’s warm – here but, as one of the states known for its gloomy weather, Washington is apparently not exempted from the heat wave.
These baked ham and cheese bread rolls smell like home. Almost.
Please don’t tell my Aunt, but these should deep fried golden. I remember celebrating my cousin’s birthday and these were served on a platter as appetizers. I was intrigued and curious – I have never had one before! I tried a piece and was immediately hooked! She had to make more because it was such a hit, especially to me. After the party I asked her for the recipe and was surprised at how easy and simple it was to make some.
I made these amazing almond buns from Paul Lowe’s new book (Sweet Paul Eat and Make: Charming Recipes and Kitchen Crafts You Will Love) while my husband was away for a work trip in Corning, NY – the land of Corningware! I fell in love with this book the minute I saw it at a bookstore while camping at Orca’s island. The gorgeous photography on the cover and a sweet photo of Paul and his adorable pup, Lestat, made me grab the book at once and take it home with me.
A certain traveler made headlines and pissed off a handful of Filipino readers when she posted I Would Rather Go Hungry Than Eat Filipino Food Again! on her blog. The article generated a lot of comebacks from displeased and apparently irritated Filipinos from all around the world. I was actually more than pissed after reading it, and I can understand why Filipinos would react the same way. Given that she was entitled to her own opinion, but her rant totally pierced through my heart and soul, especially when she said “No wonder why, in the north, the vast majority of Filipino kids and young people are overweight. This is something we have noticed straight away. People in young age are huge and it’s due to poor quality of food.”
If you have been following my blog you would know that this is not my first bread pudding recipe. I am obsessed with bread pudding I know. My mom never made bread pudding while in the Philippines because very rarely we have leftover bread to begin with. If you live with a family of 7 then you know what I’m talking about, especially when you have two older brothers who will stop at nothing to get what they want to eat, aka, leftovers. From this I have learned how to hide a stash of food in my room, lock the door, and throw away the key.
Someone once asked me “What are the dishes you missed having in the Philippines?” Honestly, I have a long list to show you, and almost all of them are cooked by my mom. My brain is flooded with memories associated with those foods, and I am feeling a little homesick to tell you honestly. I miss how my mom would wake us up on a Sunday with the smell of her delicious “adobo” or “kare-kare.” My brothers and I used to argue about who is the favorite kid, and we would judge that by my mom’s choice of cooking. read more
Tilapia has got to be my favorite fish mainly because of it’s mild flavor and growing up, my mom would cook fried tilapia – bones and all – served with white rice and sweet chili dipping sauce. Fried tilapia is actually one of the first dishes I have tried -and failed miserably -making on my own when I was younger. Apparently, I was too impatient to heat the pan and oil thoroughly so as to avoid the fish from sticking. My dad took over the frying and he didn’t mind doing the dirty work so he can have a perfectly looking fried tilapia on his plate for dinner. Now that I am married, and away from my parent’s delicious cooking, I had no choice but to learn how to cook my own fish. read more
I came across this article online about the benefits of having eggs for breakfast. I love eggs and I used to have them at least once a day when I was still in the Philippines, but now I’m afraid of them. Mainly because my mom never failed to remind me “not to eat eggs everyday” because of their high cholesterol content,” and people like me who hates almost anything high, be it my weight or caloric intake, have managed to stay away from them as long as possible. Every time I go to Pike Place Market I always grab two demi baguettes at Le Panier. They offer authentic French patisserie and I just love their macaroons! Anyway, two demi baguettes are obviously more than enough for my husband and I so I had this half-loaf of bread sitting on the counter waiting to be eaten. I went online and found this recipe for a bread pudding. It did wonders to my 3-day old baguette.
There are two reasons for this post: first is I love and incredibly miss having pandesal every morning, and second is I booked a flight to the Philippines this September! I am very excited to visit home and I could only think of nothing but Filipino foods (and my family and friends of course!) ever since I made that reservation. Pandesal (or pan de sal) is the most common Filipino bread roll. Known for it’s softness and it is not salty at all. Every morning, my dad would buy a bag of pandesals – fresh from the bakery’s oven – and I would eat it with peanut butter, spam or eggs. read more
