The weather was so nice all week and I just feel so happy wearing lighter clothes and sandals for a change. Walking around, I see blooming cherry blossoms and tulips along the sidewalks and people’s backyards, and people walking their kids or their dogs enjoying the sunshine. I love this time of the year. Unfortunately, we couldn’t visit the tulip festival in Mt. Vernon because my husband and I had been busy (You can see some photos from last year on my previous post)
I have noticed that warm weather comes with people grilling on their balcony or backyard. We had few incidents in our building about our neighbors setting off the fire alarm because they had been “grilling” in their kitchen (our building doesn’t have balconies) Apparently, that didn’t stop me from grilling my own burgers in my kitchen – I just had to make sure that all our windows were open.
I love these open-faced burgers, not only because of the combination of caramelized onions, beef and blue cheese is drool worthy, but also because these burgers have less calories. I used lean ground beef with about 20% fat and substituted hamburger buns with a slice of whole wheat bread. No wonder I didn’t feel guilty eating this burger for dinner.
- 1 pound lean ground beef
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 egg
- 2 tablespoons butter
- 1 whole red onion, sliced
- 2 tablespoons brown sugar
- 1/4 cup light mayonnaise
- 4 sliced of whole wheat bread, toasted
- 1 cup crumbled blue cheese
- Mixed greens or lettuce
- Combine ground beef, garlic, salt and pepper in a bowl. With you hands, mix meat and season well. Divide into 4 equal portioned round patties. Set aside.
- Heat a medium skillet over low heat. Add 2 tablespoons butter and melt. Next, add the red onions. Add 2 tablespoons brown sugar. Toss to combine the ingredients, and then allow the onions to caramelize over low heat for about twenty minutes, tossing occasionally.
- While the onions are caramelizing, place the patties on a pre-heated grill pan or skillet over medium to medium-low heat. Grill the burgers for about 5 minutes per side. Cook longer if you prefer a well-done patty.
- 1. Spread mayo over the toasted bread.
- 2. Next, add mixed greens and add the cooked patty on top.
- 3. Top with caramelized onions.
- 4. Sprinkle crumbled blue cheese on top.
- 5. Serve with salad or fries.
- 6. Enjoy!
- Do not press down on the burgers while grilling as this will release the juices.
- USDA recommends a temperature of 145 degrees F for medium-rare, 160 degrees F for medium, and 170 F for well done.
- You may use hamburger buns or Kaiser roll if you prefer.
